The Story
This Fair Trade Organic offering comes from Lima Coffee, a respected collective led by quality-focused producer and cupper Rony Lavan. Rony and his team work closely with smallholders throughout Cajamarca, helping them produce traceable, high-quality lots through improved processing and farmer support.
Cajamarca is quickly becoming one of Peru’s most celebrated regions, known for its elevations, fertile soils, and clean, sweet flavor profiles. This coffee is a great example — approachable, naturally sweet, and carefully crafted from farm to export.

Processing
Cherries are depulped the same day they’re harvested, fermented 12–18 hours, washed clean of mucilage, and dried on patios or raised beds depending on the farm. This classic washed process delivers the clean, sweet profile Peru is known for.
