Chiapas, Mexico – El Triunfo Biosphere Reserve

Tasting Notes: Cocoa • Papaya • Tart Citrus • Candy-Like Sweetness

Why You’ll Love It

Sweet, vibrant, and beautifully clean, this Mexico is everything we love about high-grown Chiapas coffees. It opens with smooth cocoa, bright tart acidity, and a tropical pop of papaya, finishing with a delightful candy-like sweetness. A comforting, easy-drinking cup with just enough sparkle to keep every sip interesting.

Perfect for anyone who enjoys balanced sweetness with gentle fruit complexity.

The Story

This Fair Trade Organic lot comes from the women producers of the Comon Yaj Noptic cooperative in Chiapas — a group founded in 1995 by smallholder farmers living in the buffer zone of the El Triunfo Biosphere Reserve, one of the most biologically diverse cloud forests in the world.

Growing coffee in this region means working in lush, high-elevation terrain with fertile volcanic soils and heirloom varieties like Typica, Bourbon, and Mundo Novo. Despite the remoteness of the area, the cooperative has developed a strong reputation for quality and sustainable practices.

This women-produced lot receives a dedicated premium that goes directly to the female growers, supporting gender equity and community development. It’s meaningful coffee with purpose behind every pound.

Brewing Recommendations

  • Pour-Over & Drip: clean cocoa sweetness, bright citrus, and smooth balance
  • French Press: rounder body with deeper chocolate tones
  • Cold Brew: surprisingly sweet, refreshing, and naturally smooth
